Vitamin B12, Iron, Amino acids, and other nutrients can and should be added to vegan meat substitutes to prevent malnutrition, which not every Vegan is aware of. Sometimes this fortification is already compulsory. To mimic the look of fresh ground beef, a nice pink color needs to be maintained over the shelf life. In Canada, for instance, “simulated meat products” have to be fortified with Thiamine (B1), Riboflavin (B2), Niacin (B3), Pyridoxine (B6), D-pantothenic acid, Folic acid (B9), Vitamin B12, Iron, Magnesium, Potassium, Zinc, Copper and Amino Acids like Histidine, Isoleucine, Leucine, Lysine, Methionine, Phenylalanine, Threonine, Tryptophan, Valine.
